This was one of the first meads I’ve made (made 3 before it). It is made from caramelized honey and fermented with Red Star Cote Des Blancs. It ended up sweeter than it should have because of my newbie ways (lack of nutrients). But it is one of my best earlier meads. I split the 750ml bottle into two 12oz ones as it was my last. I’ll finish up the wine bottle over a couple days and drink the other 12oz in 6-12 months. It’s very hard for me to drink the last bottle of my meads.

The fine ultra-fine sediment actually stained the glass somehow.
It is 11% ABV and 1.5 years old at this point.

Simple Bochet Tasting (1.5 Years)

Deep reddish brown color. The aroma is like marshmallows and red wine. It is aggressive in flavor with some burnt notes along with cherries. It’s a little too sweet and assertive on the pallet. The burnt notes linger on the back of the throat for several minutes before subsiding. It’s definitely a love it or hate it type of thing. It has mellowed out over the past year, so it may just need more time to mellow and round out. Bochets are certainly not something you have done in a month and they hold up well to extended aging.
