Bochet? (Pronounced boh-shay) This is the name for a mead made from a caramelised honey. This process of gently heating the honey makes a darker toffee tasting honey, layered with a rich buttery sweetness.

Delicious! Creamy with a hint of strawberry and that fantastic honey aftertaste

Not what I expected. Not unpleasant, however when you read Strawberry Cheesecake Mead, it conjures up an image of a sweet summer drink. It certainly has hints of fruit, but I think it is closer to a strong traditional mead.
