Using a farmhouse Saison yeast, and honey from the Hive Mind hives in the Wye Valley, this is a celebration of the summer season in a bottle. What is a Saison?
Saison, also called "farmhouse ale", is a style of beer that originated in southern Belgium, but is named after the French word for season. These seasonal beers often use wild, top-fermenting yeast and a variety of local, seasonal ingredients. Refreshing and usually moderate in alcohol, these brews can range from light to dark, taste malty or hoppy, and are often noted for fruity or spicy characteristics, as well as a low bitterness. Tasting notes often include the word "funky" to describe the unique yeast style that has a lovely farmhouse charm. The fine and abundant bubbles are other hallmarks of this style of beer that gives it an air of champagne sophistication.
Our unique saison has been co-fermented with, and bottle conditioned using, our very own honey bringing a floral sweetness and lovely meadow aroma.
